Just bought a 2018 SR5 with the 16X7 rims i believe (stock?) And would like to have the "meaty" look, where the tire extends out past the wheelwell about 1".
Will a wider tire on the stock rim give me that look?

16x8 with a 4.5 backspace and 0 offset will do that for ya.
 
Backspacing/offset talk is basically forign language to me.

I just want a good looking truck where i dont want to lift it and dont have to worry about rubbibg at full turning radius.

The 1st 3 numbers are the width in mm

2nd numbers are the height of sidewall based on % of the width.... 65= tire will be 65% height of the tires tread width.

The 3rd number is rim diameter.

A 255 is narrower than a 265 for instance

A 265/75/16 is taller than a 265/70/16
 
That would be a 26x10 tire,... you might want to look at a 265/75R16.

...And no lift required or rubbing will occur?

265/75/16 will fit bone stock.... maybe minor rubbing on the worthless mudflaps when turned at full lock.... MAYBE.
