Ok so I’m new to all of this. I am currently running 285-75-16 on stock rims with 1.5” spacers. Can I fit the same size tires on a 16” rim with a 12mm offset without the spacers on?

That might work but it would be pushing it. I know some guys are running that size tire on the TRD Pro wheels and they are +14 but they had to do some modification to make it not rub. ie trimming, heating, molding wheel well.
I would recommend at most +4 or the TRD pro 4runner wheels.
I would highly recommend 0 or -6 for that size tire. If you’re going to replace the wheels you might as well get the best fit. IMO.
