Anybody know what I'll have to do so my tire doesn't rub while I have steering turned all the way? I have a 2016 Tacoma double cab with BFG AT size 285 75 16. With only a 2 1/2 leveling kit. Any ideas?

Take mud flaps off if you have them on
Get smaller tires.
Increase the lift.
Change the offset of the wheels
Get wheel spacers.
Change driving habits.
Live with the rubbing.

Find out where it's rubbing before you just start cutting. If it's hitting plastic you can heat it up and re shape it. Harbor freight has heat guns for less than $15.

It only rubs on the UCA when it is turned all the way

Then your tires are too wide and you need a lower offset wheel or wheel spacers. Personally I wouldn't do wheel spacers.
