3 inch icon stage 2 lift kit /17in tires 285/70r17

Is there anything I can do or a particular tire this size I can buy that will not affect my gas mileage too significantly.
I know it’s a price you gotta pay but losing 6 mpg is disheartening.

And thanks to you all that told me not to get the leveling kit, almost pulled the trigger on that

Unless someone comes out with a tire in that size that weighs less than 55 lbs mileage is gonna suck. Some of the loss you are seeing is from speedo error unless you are calculating from gps mileage. So you probably only lost 5mpg if that makes it better

What can I do to obtain a device that can give me the correct mpg and mileage. Or could the dealership tweak the system for me ?

Get a lower load range and ply rated tire like a C 6 ply vs an E 10ply. That will cut weight and improve MPG.
