On the front ride Height adjustable 5100’s, what notch do I use in conjunction with the OME 887’s to achieve a 3” lift?

You're not going to get 3" of lift with the 5100's on any setting unless they've drastically changed them (doubtful), If you have a coil (OME) that gives 3" of lift, set the clip at the lowest setting (stock position) & let the coil do it's job without a lot of preload...
 
If he gets the coils will he need ucas, add a leaf or a 1 inch block? Or will it be leveled all round?

I am asking because I want to run that Setup as well.
 
May or may not need new UCA. 3” is pushing it to get proper alignment on stock UCA. You’ll need something in the back to bring it up or you’ll be nose high. AAL or a block would work. A new leaf pack would be best.
