that chattering from the plates is probably what the noise is accelerating up hilly terrain
i had not thought of this or that!

Because your putting some pressure on the surfaces of the bearing damping the sound.

One shop look at it months ago said it was looking like exhaust rattle rattle somewhere somehow

Heat shields like to rattle, especially when you step on the skinny pedal.
